Tomate Quesillo

Gastronomic Experiences Laboratory created and curated by a group of Mexican foodies and chefs who since 2012 began the task of visiting each restaurant and food establishment to meet and recognize the Mayoras and chefs of the city of San Cristóbal de las Casas in Chiapas. In this process we find the freshness of local products, the value of the creativity of the area and the need to share this with the world. In addition, we find the need to preserve, recover and regenerate the identity, culture and territory within our country.
